Cinnamon and Honey Crepes

We've been making crepes from scratch for years. We don't eat or cook with sugar and many years ago discovered that most batters have undesirable ingredients. So, we began to make somethings (like crepes) from scratch.

This morning I made Sophie some Cinnamon and Honey Crepes as she wrote an essay on cinema for her art history class. We don't generally use measure spoons and the like but rather add to taste. Here's what I did...


In a regular-sized green ceramic eating bowl from Ikea I added:
    -4 heaping tablespoons of flour (just plain, cheap run of the mill flour)
    -about a tablespoon of cinnamon (poured straight from the bag into the bowl)
    -1 brown egg (why brown? Because that's what they have at the nearby store)
    -1 espresso spoon of honey

I mixed these ingredients up a bit with a touch of milk so that when I added more of the milk the dry ingredients wouldn't splash and spray around making a mess. After a couple minutes of mixing I added:

    -Milk - which I pour directly into the bowl until it is at a constancy that seems right. Sophie tends to make her crepes a little thinner than mine. But as of late she's thought mine taste better. I think the key to what is making these crepes so delicious is the touch of honey combined with the ample and generous amount of cinnamon.

We make our crepes in a standard preheated, buttered crepe pan. I suggest preheating the pan for the following reason: This morning I didn't preheat the Sophie's second crepe. It took a while to cook and I ended up flipping it 3 times. Once finally on her plate she liked it though it tasted like a very thin muffin.


A note on flipping crepes: As long as the crepe isn't so thin that it rips as you try to lift it with the spatula it's not that hard since the buttered pan makes it easy for the crepe to slide from side-to-side once no longer doughy.

At this point, it's easy to gently lift the crepe and flip it. Once cooked, I usually just slide the crepe directly onto the plate allowing it to lay flat and pretty much covering the entire surface of the plate.

Now it's time to add butter and honey to taste. I love a puddle of butter and a bit of honey. Sophie loves ample butter and enough honey to choke an elephant.
